What makes mochi ice cream so special is the mochi dough. Mochi originates from Japan and is made from steaming short-grained glutinous rice flour (commonly sourced in east Asia) and kneading it to form a dough that can be used for both savoury and sweet treats. Mochi has an intriguing texture which is soft, pillowy, chewy and delicious. To make our mochi, we add sugar to create a sweet sensation. Our mochi doughs get even more exciting when we add natural colourings to them to create subtle undertone flavours and a fun look.
